About the Author: Dr. Bjødne Eskeland was born and educated in Norway. He received a Master’s Degree in Science at the Agricultural University of Norway in 1964. He came to the United States for his graduate studies and completed his Ph.D. in Animal Nutrition at the University of Missouri, Columbia in 1971. He has been on staff at Norwegian Food Institute and the Environmental Toxicology Department at the University of Trondheim in Norway.
